A pre-Prohibition Philadelphia classic that has recently regained popularity. Raspberry syrup can be made by muddling fresh raspberries with simple syrup.
• 2 ounces gin
• 1/2 ounce lemon juice
• 1/2 ounce raspberry syrup
• 1 egg white
• Garnish: 3 raspberries
1) Add the gin, egg white, lemon juice and raspberry syrup into a shaker with ice and shake well.
2) Strain into a chilled cocktail glass.
3) Garnish with 3 speared raspberries.
