Dry shaking helps to mix the ingredients with the egg white and provides a thicker texture.
• 2 oz Gin
• 3/4 oz Fresh lemon juice
• 3/4 oz Simple syrup
• 1 Egg white
• 1 oz Club soda
• Garnish: lemon peel
1) Add gin, lemon juice, simple syrup, and egg white to a shaker and allow to settle for 10 seconds.
2) Dry-shake ingredients (without ice) for 10 seconds.
3) Add ice and shake very well.
4) Double-strain using Hawthorne and fine mesh strainers into a chilled highball glass and top with club soda.
5) Garnish with lemon peel
